Ground beef hash is the perfect way to use your Parson's Creek ground beef when you want something different than a burger. I am a big potato lover, so this is the perfect recipe if you want something hearty in the morning. Great for having guests or a Sunday breakfast with the family.
Ingredients
- (1/2) yellow onion small dice
- (1) red bell pepper small dice
- (2-3 cloves) garlic, minced
- (1 pound) Parson's Creek Ground Beef
- (1 pound) Parson's Creek Ground Beef
- (2 tablespoons) unsalted butter
- (1 pound) red skin potatoes
- (2 teaspoons) garlic powder
- (1 teaspoon) onion powder
- (1 and 1/2 teaspoon) chili powder
- Salt and pepper to taste
Directions
- In a large cast iron skillet over medium heat, brown and crumble ground beef. Season well with all spices. Remove the cooked ground beef and drain all excess grease. Set aside.
- Place butter in skillet and add diced peppers and onion, cook until just browned on the edges and translucent. Add minced Garlic.
- Next add small diced potatoes. I keep the skin on for color and texture. Season well with salt and pepper. Cook potatoes on medium to medium low heat until golden brown and fork tender. Add your ground beef back into the skillet and combine. Continue to crisp together.
- Ready to serve with eggs any style. I enjoy some sliced jalapeños and green onion and avocado. Enjoy!
