Steak with Chimichurri Sauce

Chummichurri is a small part of the vast Argentinian cuisine. This simple sauce recipe can transform any steak into a fresh, zesty treat. Perfect for tacos or sliced on top of rice.
Ingredients
- (1 cup) parsley leaves stems removed
- (1 tablespoon) fresh orengano leaves stems removed
- (4-5) garlic cloves
- (2 teaspoons) red pepper flakes (adjust to taste)
- Salt and pepper to taste
- (1/4 cup) red wine vinegar
- (1) small shallot cut into wedges
- (1/2 cup) olive oil
- Steak - Flat iron steak or Sirloin
Directions
- Place garlic, shallot, parsley, oregano, salt and pepper into small food processor.
- Blend until well chopped but still slightly chunky. Add red pepper flakes and red wine vinegar. Pulse about 3-4 times.
- Next, while the food processor is running slowly, add your olive oil in a steady stream until all oil is incorporated.
- Place sauce in airtight container and store overnight to develop flavor.
- Sauce will last up to 3 days in the fridge
- Serve sauce on top of your grilled steak.
